1 Sweet Potato peeled and diced
1 tablespoon Avocado oil
1 cup Baby spinach
1 teaspoon CBD avocado oil
1 Large eggs

Sweet Potato Breakfast Bowl

This colorful breakfast bowl is infused with a high CBD Avocado Oil

Place diced sweet potatoes on a baking sheet. Toss with avocado oil.

Roast in oven at 400 F for 20-25 minutes until tender when pierced with fork. Remove from oven and set aside.

Heat infused oil over medium low heat in a medium skillet. Add leafy greens and cook until wilted, keeping heat low.

Remove from pan and pour into bowl. Return pan to heat and increase to medium high.

Crack egg in pan and cover with lid. Cook for 1-2 minutes until desired doneness.

Top leafy greens with 1/2 of the diced sweet potato and top with fried egg. Season with salt and pepper to taste.
